Ingredients
- 1 box Three Farm Daughters Elbow Macaroni
½ cup + ¼ cup Unsalted Butter, divided
½ cup All-Purpose Flour
- 2 cups Whole Milk
1 ½ cups Gruyère Cheese, grated
1 ½ cups Fontina Cheese, grated
- 2 tbsp Truffle Oil
- Salt and pepper to taste
- 1 lb Cremini Mushrooms, sliced
- 2 cups Brioche Breadcrumbs
- Fresh Parsley, chopped, to serve
- Optional: ½ a fresh Black Truffle, shaved, to garnish
Directions
Bring a large pot of salted water to the boil and preheat oven to 375°F.
- Cook the Three Farm Daughters Elbows according to the package instructions, then drain and set aside.
- In a large saucepan, melt the butter over medium heat. Add the flour and stir to form a roux. Cook for about 2-3 minutes, or until the mixture is golden and fragrant.
Gradually add the milk to the roux, whisking continuously, until you have a smooth sauce. Stir in the gruyère cheese, fontina cheese, and truffle oil. Season with salt and pepper to taste and cook until the cheese is melted and the sauce is thick and creamy.
In a separate pan, sauté the sliced mushrooms in a little olive oil over medium-high heat until tender and browned, about 5-7 minutes.
Combine the cooked Elbows, cheese sauce, and sauteed mushrooms in a large greased ovenproof dish, or divide among individual ramekins.
Next, make the crispy crumb topping. In a medium bowl, mix together the brioche breadcrumbs and remaining 1/4 cup of melted butter. Sprinkle the breadcrumb mixture evenly over the top of the mac and cheese.
Bake for about 20-25 minutes, or until the brioche crumbs are golden and the cheese is bubbly.
Serve at once, scattered with parsley, an extra drizzle of truffle oil and some decadent shavings of fresh black truffle, if you please!
Recipe Note
For a touch of luxury, consider adding some freshly shaved truffles on top of each serving as a garnish. The earthy, musky flavor will complement the truffled mushrooms perfectly!
