Spaghetti Carbonara

This is our spin on the creamy, classic Italian Carbonara! A meal the whole family will enjoy.

Ingredients
16oz of thick cut bacon
2 large eggs
2 egg yolks
4 oz parmigiano reggiano
1/4 tsp black pepper
12oz of 3 Farm Daughters Spaghetti
1 Tbsp pasta water
1 garlic clove, minced
Directions
Slice bacon in to 1” pieces.
Add pepper and parmesan to egg mixture, combine.
In a large bowl whisk together eggs and yolk.
Bring a large pot of salted water to a boil.Cook spaghetti per package instruction.
Prior to draining set aside 1 cup of pasta water.
While the pasta is cooking, place bacon in a non stick pan over medium high heat. Cook for 4 to 5 minutes until golden. As the bacon heats up, the fat will melt so it fries in its own fat. If using garlic, add it in the last minute. Reserve about a Tbsp of bacon grease to add to noodles to coat.
Transfer the pasta and any residual fat in the pan into the bowl with the egg. Add 1/2 cup pasta cooking water. Mix thoroughly for 1 minute until the sauce transforms from watery to creamy and clings to the pasta strands.
Serve immediately, & garnish with parmigiana reggiano and a pinch of black pepper.
