Ingredients
1 lb boneless, skinless chicken breast, cubed
Salt & Pepper
2 tbsp olive oil, divided
3 gloves garlic, minced
1 onion, diced
3 carrots, peeled & diced
3 celery ribs, diced
6 cups chicken stock or broth

6 oz 3 Farm Daughters Orzo
1 sprig rosemary, optional
2 bay leaves, optional
2 tbsp lemon juice
Fresh parsley for garnish
Directions
Season chicken breast with salt & pepper.
Heat 1 tbsp olive oil in a large pot over medium heat. Add chicken and cook until golden brown, approximately 3-4 minutes; set aside.
Add remaining 1 tbsp olive oil to the same pot. Add garlic, onion, carrots, and celery. Saute, stirring occasionally, until tender, approximately 3 minutes.
Add chicken stock/broth to the pot. Add bay leaves, 1 cup water, and bring to a boil.
Add uncooked orzo, rosemary and the chicken to the boiling broth. Reduce heat to a simmer until orzo is tender, approximately 10 minutes.
Stir in lemon juice, salt & pepper, to taste.
Serve and garnish with fresh parsley.
