Ingredients
1 package 3 Farm Daughters Spaghetti
- 4 bone-in, skin-on chicken thighs
- 2 tsp Italian seasoning
1 tsp paprika
Kosher salt & black pepper to taste
2 tbsp olive oil
2 garlic cloves
1 medium shallot
1 tbsp tomato oil from sun-dried tomato jar
1/2 cup drained sun-dried tomatoes
2 1/2 cups vegetable broth (split)
Juice of 1 lemon
3/4 cup heavy cream
2 cups baby spinach
1/2 finely grated parmesan
Directions
Begin by preheating your oven to 400°F.
Season the chicken thighs generously with Italian seasoning, paprika, salt, and pepper.
In a large cast-iron skillet over medium-high heat, warm olive oil. Add the seasoned chicken and cook until the skin turns a golden brown color, approximately 6-7 minutes. Once cooked, remove the chicken from the skillet and place it onto a separate plate.
In the same skillet, add the tomato oil, shallot, and garlic, and cook until fragrant, approximately 3 minutes.
Pour in 1 cup of vegetable broth and lemon juice, and cook until it is reduced by half. Then, pour in the remaining vegetable broth, add the tomatoes, and gradually incorporate the cream while continuing to stir. Bring the sauce to a simmer until all ingredients are fully mixed.
Place the chicken back into the cast iron skillet and set it in the oven. Bake until the chicken is thoroughly cooked through to an internal temperature of 175°F, approximately 15 minutes.
While the chicken is baking in the oven, cook 3 Farm Daughters spaghetti to al dente.
Once the chicken is cooked, remove the cast iron skillet from the oven. Take the chicken out of the skillet and place it onto a separate plate.
Add the spinach, Parmesan cheese, and cooked Farm Daughters spaghetti to the skillet. Mix until the ingredients are evenly distributed and the spinach has wilted. Return the chicken to the skillet and serve!
