Level up your office lunch with this Mediterranean Pasta Salad! It's time to swap out your turkey & cheese sandwich with something you will actually look forward too. This recipe is extremely versatile, so use whatever veggies you have in your refrigerator and add a protein too if you'd like. We hope you enjoy this flavorful 3 Farm Daughters pasta salad as much as we do!
Ingredients
- 12oz box of 3 Farm Daughters Rotini 
- ½ cup pepperocinis 
- ¼ cup red bell peppers 
- ¼ cup yellow bell peppers 
- 1 cup halved cherry tomatos 
- ½ cup red onion 
- ½ cup kalamata olives 
- 1 cup feta cheese 
- fresh parsley for garnish 
- ¼ cup olive oil 
- 2 Tbsp apple cider vinegar 
- 1 tsp dried oregano 
- ½ tsp garlic powder 
- ½ tsp onion powder 
- ¾ tsp sea salt 
- ½ tsp black pepper 
Greek Salad Dressing
Directions
- Fill a large pot with salted water and bring to a boil. When roaring, add in pasta. Cooking until al dente ~ 11-13 minutes. 
- While noodles are cooking, whisk together all ingredients for the greek dressing and set aside. 
- Add the pepperocinis, red & yellow peppers, cherry tomatoes, red onion, kalamata olives, feta cheese, and cooked/cooled pasta to a large mixing bowl. Pour Greek dressing into mixing bowl and toss until well mixed. 
- Top with fresh parsley, more salt & pepper, and ENJOY!
