3 Farm Daughters
Okay this one is easy to throw together and so high in protein. My Husband ate it for lunch and was too full to eat dinner. It would be a perfect planting/harvest cooler meal. Packed with nutrients, and you cannot, I repeat, you cannot taste the sardines. And sardines are a nutrient POWERHOUSE. So this is a big deal.
Ingredients
1 box 3 Farm Daughters Rotini
1 cup farro
2 ribs celery, diced
1/2 cup skyr, plain
1/2 cup mayonnaise
1/4 cup raisins
3 cloves garlic, minced
1 tbsp dijon mustard
1 leek, sliced thinly (white part only)
1 cup tuna, drained and sliced small
1 tin boneless, skinless sardines, sliced small (about 4 fillets)
5 dashes Worcestershire sauce
salt and pepper to taste
Directions
Bring a medium sized saucepan to a rolling boil.
Salt the water and add farro and set the timer for 30 minutes.
When there is 13 minutes of boiling time left, add the pasta and stir well. Keep at a rolling boil. (Make sure there is plenty of room in your pot for the pasta and farro to dance around).
While that continues to boil, add tuna, sardines, celery, leeks, raisins, garlic, skyr, mayonnaise, mustard and Worcestershire sauce and toss in a large bowl until fully combine.
Once pasta and farro and completely cooked, drain and allow to cool to room temp.
Then add the farro/pasta mixture to the tuna mixture and combine well.
Add salt and pepper to taste. Enjoy cold!
