Straight from East Range Kitchen, Kaylee Stevie is sharing with us her Bacon and Asparagus Steak Pasta Salad. This flavorful steak pasta salad packs a punch and is substantial enough to serve as a satisfying main course. It's perfect for hectic weeknights or a filling lunch option.
Ingredients
1 box of 3 Farm Daughters Penne
1 ½ lbs sirloin steak
8 oz bacon, chopped
I large bunch of asparagus, chopped
½ red onion, diced
2/3 cup shredded parmesan cheese
½ cup aioli or avocado mayo
½ cup sour cream
1 ½ tbs apple cider vinegar
Salt, pepper, garlic powder to taste
Directions
Cook pasta according to package directions for al dente, strain, run under cold water to stop cooking, and set aside.
Assemble your dressing by mixing together your Greek yogurt/sour cream, mayo, Parmesan, apple cider vinegar, salt, pepper, and garlic powder to taste, then set aside.
Cut the bacon into bite-size pieces. Cook on a hot cast iron skillet or flattop grill until cooked. Add the asparagus and cook together until the asparagus is just slightly softened; you still want it to have some bite. Set aside and allow to cool.
Cook your steak on the same grill/pan by searing on both sides until the internal temperature reaches 135°F. Set aside to rest until cool before cutting into bite-size pieces.
When all elements are cooled to room temperature, in a large bowl, mix together pasta, red onion, bacon asparagus mixture, steak, and dressing.
Serve Chilled.
Recipe Note
- This recipe is great if you already have leftover steak you want to use.
- It would be really good with halved grape tomatoes too.
- Be sure to let the steak rest and fully cool before adding so that none of the excess juices from the steak are coating the pasta.
-You can use another lean cut of steak if you'd like but I like sirloin because there isn't as much fat which isn't good served cold.
