Ingredients
For the Italian Vinaigrette:
1 tsp Italian Seasoning
2 tsp Freshly Ground Black Pepper
1½ tbsp Honey
1 tsp Salt
¼ cup Extra Virgin Olive Oil
2 tsp Dijon Mustard
4 tbsp Red Wine Vinegar
Juice of 1 Lemon
3 Garlic Cloves, minced
- For the Pasta Salad:

12 oz 3 Farm Daughters Pasta
1 cup Salami, sliced into thin strips
½ Small Red Onion, chopped small
½ cup Kalamata Olives, pitted and halved
1 small Cucumber, peeled and diced
1 cup Cherry Tomatoes, halved
¼ cup Fresh Parsley, chopped
8 oz Mozzarella Pearls
Fresh Basil for garnish
Flake Salt for garnish
Directions
- Italian Vinaigrette:
1. In a small mixing bowl, combine Italian seasoning, freshly ground black pepper, honey, salt, extra virgin olive oil, Dijon mustard, red wine vinegar, Juice of 1 lemon, garlic cloves.
Whisk all the ingredients together until well combined. Alternatively, you can use a jar with a tight-fitting lid and shake it vigorously to emulsify the vinaigrette.
3. Taste the vinaigrette and adjust the seasonings according to your preference. Add more vinegar or lemon juice for a tangier flavor, or more honey for sweetness. Set the vinaigrette aside while you prepare the pasta salad, allowing the flavors to meld together.
- Pasta Salad:
1. Cook 12 oz of your favorite 3 Farm Daughters pasta according to the package instructions until it is al dente. Drain the cooked pasta and rinse it under cold water to stop the cooking process. Let it cool completely before assembling the salad.
2. In a large mixing bowl, combine the cooked and cooled pasta, 1 cup salami, red onion, Kalamata olives, cucumber, peeled, cherry tomatoes, fresh parsley, and mozzarella pearls
3. Pour the prepared Italian vinaigrette over the pasta salad and toss everything together until all the ingredients are well coated with the dressing.
4. Garnish with fresh basil leaves and a sprinkle of flake salt for added flavor and presentation.
