Perfectly timed for soup season, this dish features the goodness of 3 Farm Daughters pasta with a blend of flavors that'll make your taste buds dance. It's a quick and easy recipe that's sure to become a favorite for chilly evenings.
Ingredients
2 Tbsp olive oil
1 medium yellow onion, diced
2 medium carrots, chopped
2 celery ribs, thinly sliced
3 cups yellow squash, ½-in diced & peeled
1 tsp sea salt
freshly ground pepper
3 garlic cloves
1 28oz can of diced tomatoes
1 ½ cups red kidney beans, cooked, drained, and rinsed
4 cups vegetable broth
2 bay leaves
1 tsp dried oregano
1 tsp dried thyme
1 box 3 Farm Daughters Rotini
pinches of red pepper flakes
grated Parmesan cheese
Directions
Heat the oil in a large pot over medium heat. Add the onion, carrots, celery, yellow squash, salt, and several grinds of black pepper, and cook, stirring occasionally, for 8- 10 minutes, until the vegetables begin to soften.
Add the garlic, tomatoes, beans, broth, bay leaves, oregano, and thyme. Cover and simmer for 20 minutes.
Stir in the pasta and cook, uncovered, for 12 more minutes, until the pasta is cooked al dente.
Season to taste and serve with parsley, red pepper flakes, and parmesan, if desired.
