Garlic, butter and parmesan cheese bring a dose of luxury, and a bright burst of lemony tang offsets the richness so pasta dishes spring to life. The magic happens with a splash of pasta cooking water from the pot, stirring up a delicate, glossy and velvety sauce that sings with lively flavor and a lightness that can't be beat.
We love it with grilled zucchini and pine nuts, sauteed mushrooms and hazelnuts, asparagus and thyme, or even in our Roasted Broccoli-Garlic Pasta with toasted almonds. Toss in some lean protein like grilled chicken, cannellini beans or chickpeas for a complete, flavorful and nutrient-dense dinner!
Ingredients
1 box Three Farm Daughters Pasta
3 tbsp Extra Virgin Olive Oil
5 cloves Garlic, crushed
- Pinch of Garlic Salt & Pepper
½ cup Vegetable or Chicken Broth, hot
- 4 tbsp Butter (or non-dairy buttery spread)
- 2 tsp Onion Powder
- 1 tsp Lemon Zest
- 2 tbsp Lemon Juice
Pinch dried Red Pepper Flakes
- ½ cup Parmesan Cheese (sub plant-based for vegan option)
½ cup Toasted Nuts & Fresh Herbs, to serve
Directions
Bring a large pot of salted water to the boil for the pasta while you prepare your other ingredients.
In a small jug or bowl, combine the butter, hot broth, onion powder, lemon zest and juice, and red pepper flakes. Stir until the butter melts, then set aside.
Meanwhile, cook pasta according to package directions until al dente. When the pasta is nearly cooked, scoop out 1 cup of the starchy cooking water to use later in the sauce, and set aside.
Drain the pasta and set aside in a colander to keep warm, immediately transferring the hot, empty pasta pot back to the stove over a low heat. Working quickly, pour in the olive oil and crushed garlic. Gently sizzle for 1 minute, until garlic is fragrant.
Next, return the drained pasta back to the pot with the garlicky oil. Turn off the heat and quickly pour the butter and broth mixture over the pasta, adding any protein or veggie mix-ins of your liking. Season to taste with garlic salt and pepper.
Gently stir everything through pasta, adding a few spoonfuls of the starchy reserved cooking water. Continue stirring gently until the liquid is absorbed and forms a glossy, fragrant sauce, adding an extra knob of butter if desired. Check for seasoning, adding a spritz more lemon to balance the richness.
To serve, scatter generously with shredded parmesan, herbs, and toasted nuts for crunch. Enjoy at once!
