Ingredients
3 Tbsp olive oil
1 ½ medium yellow onions, divided
1 lb ground beef
1 ½ tsp fine sea salt, plus more for pasta water
1 tsp pepper
4 garlic cloves
3 Tbsp tomato paste
⅓ cup vodka
16 oz whole canned tomatoes
½ tsp crushed red pepper flakes
½ cup heavy whipping cream
½ cup Parmesan cheese, plus more for garnish
Fresh parsley for garnish
Directions
Heat oil in a large pot over medium high heat. Cook 1 medium diced onion until translucent.
Add beef, salt, and pepper, cooking until beef is browned.
Remove beef from pot and set aside.
Add olive oil to pot and cook half diced onion and saute until softened, about 5 min. Add garlic and saute until fragrant, about 30 seconds.
Add tomato paste and vodka and stir for 2 minutes until most of the vodka has evaporated out.
Add tomatoes, salt, and red pepper flakes. As the sauce simmers begin mashing up the tomatoes. Once all mashed, cover partially and simmer for 15 min.
While the sauce simmers, bring a pot of water to a big, rapid boil and cook penne per package instructions.
Add shredded Parmesan and heavy whipping cream to the tomato sauce and return to a simmer.
Without draining, add cooked pasta directly to the sauce. To expand sauce further you can add reserved pasta water one Tbsp at a time.
Season with salt and red pepper flakes. Garnish with shredded Parmesan and parsley.
