Don't sleep on this healthier mac and cheese. It's total homemade goodness! I put it to the taste test with a 2 year old, 3 year old, my husband and a friend of mine. ALL reviews came back OVERWHELMINGLY positive.
The healthier aspect comes from using the sourdough starter instead of traditional, adding in 2 heaping scoops of collagen, and 2 egg yolks. I hope you love this recipe as much as my people did!
I love using raw milk! You can locate a dairy farmer near you using the realmilkfinder.com or you can get very low temp pasteurized at the health food store called Kalona, it's an orange bottle.

Ingredients

1 box 3 Farm Daughters Elbow
½ cup Sourdough Starter
5 Tbsp Butter
2 cups Whole Milk (Raw if you have it!)
2 Scoops Collagen
6oz Brick of Sharp or Mild Cheddar Cheese
2 Egg Yolks
4 Tbsp Reserved Pasta Water
Directions
Boil noodles according to package.
In a pan add sourdough starter and butter. Whisk continuously until it begins to brown slightly. This is cooking the flour.
Add ½ cup of the milk and whisk in. Once combined, add another ½ cup, whisk in and again 2 more times.
With the last pour of milk add in 2 scoops of collagen and mix to combine.
Over the pan, shred the 6oz of cheese and stir until melted and all combined.
Turn off heat and stir in 2 egg yolks.
Ladle the cooked pasta onto the cheese and 4 Tbsp of pasta water and mix all together.
