A savory comfort dish blending tender chicken, crispy bacon, and hearty vegetables in a creamy sauce, topped with a golden crust of cheese. Perfect for cozy gatherings or weeknight dinners, this hotdish promises a satisfying blend of flavors and textures in every bite.
Ingredients
1 box 3 Farm Daughters Elbows
1 lb bacon, sliced small
1 lb chicken, cubed (bonesless, can use thighs, breasts or cooked and shredded chicken)
1 shallot, diced
3 garlic cloves, minced
8oz baby bella mushrooms
4 Tbsp butter
2 Tbsp sherry wine
1 cup chicken broth
1/2 cup frozen peas
1/2 cup tricolor frozen carrots
2 Tbsp Einkorn flour (or other flour)
1 Tbsp Italian seasoning
1 lemon, juiced
1/2 cup cream
1.5 cups whole milk
1.25 cups Parmesan cheese, shredded
4 Tbsp reserved pasta water
8oz mild cheddar cheese
2 tsp oregano
Directions
Preheat oven to 350 degrees.
Cook pasta according to package.
In a large pan, add the bacon, once 75% cooked add the chicken.
Stir often. After a few minutes, add the shallot. Cook until softened, then add the butter, garlic and mushrooms. Allow to cook for 3-4 minutes. Make sure to stir so the bottom doesn’t burn.
Add sherry wine. Stir and allow to evaporate. (2 min)
Add flour and stir until fully combined.
Add chicken broth, peas, carots, and Italian seasoning. cook, stirring often until carrots are softened.
Turn heat down to med-low, add Parmensan, cream and milk and stir to fully combine. Allow to melt.
Add lemon juice, cooked pasta and pasta water. Stir well.
Transfer into a 9x13 baking dish. Add shredded mild cheddar cheese to the top and a sprinkle of oregano on top.
Bake in oven for 20-30 min.
