The perfect light, fresh PASTA + SALAD collab we've all been waiting for!
Ingredients

8 ounces (about half a package) of 3 Farm Daughters pasta (penne or rotini works well)
5 cups of BrightFarms salad greens (mix of romaine and sunny crunch)
1 cup cherry tomatoes, halved
1/2 cup grated Parmesan cheese
1/4 cup thinly sliced red onion
1/4 cup chopped fresh parsley
1/2 cup mayonnaise
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- Salt and freshly ground black pepper, to taste
- 2-3 tablespoons water, to thin the dressing (optional)
For the Salad:
For the Caesar Dressing (or use Chickpea caesar cunch kit):
Directions
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain the pasta and rinse under cold water to stop the cooking process. Set aside.
- Prepare the Dressing: In a small bowl, whisk together the mayonnaise, grated Parmesan cheese, lemon juice, minced garlic, Worcestershire sauce, Dijon mustard, salt, and pepper until well combined. If the dressing is too thick, you can thin it out with water, 1 tablespoon at a time, until you reach your desired consistency. Taste and adjust seasonings as needed.
- Assemble the Salad: In a large salad bowl, combine the cooked and cooled pasta, BrightFarms salad greens, halved cherry tomatoes, sliced red onion, and chopped parsley.
- Add the Dressing: Pour the Caesar dressing over the salad ingredients. Toss gently until everything is evenly coated with the dressing.
- Serve: Sprinkle the grated Parmesan cheese over the top of the salad. Serve immediately, or chill in the refrigerator for 30 minutes to allow the flavors to meld before serving. Enjoy your delicious and refreshing Pasta Caesar Salad featuring BrightFarms greens and 3 Farm Daughters pasta!
