Introducing our Taco Hotdish – a hassle-free dinner that promises to be an instant family favorite! This easy-to-make, one-skillet wonder is not only a savory sensation, packed with fiber and protein, but also a cleanup champion.

Ingredients
1½ lbs Beef
2 packs of taco seasoning
1 small yellow onion diced
2 Tbsp oil
¾ cup rutabaga
1 red bell pepper
1 can corn, drained
1 can petite dice tomato, undrained
1 19 oz can of enchilada sauce
1 box 3 Farm Daughters Elbows
1 cup shredded cheddar cheese
10 oz of queso fresco
¼ cup sliced radishes
cilantro, for garnish
avocado, for garnish
Directions
Bring a pot to boiling and cook elbows to al dente
While pasta is cooking heat a skillet on medium heat and add 2 tablespoons of oil
Add ground beef and onion to skillet. Once browned, drain and return to skillet
Add red pepper and rutabaga to skillet and heat until softened
Add seasoning packets and 1 can of red enchilada sauce, mix with beef and let simmer
Add can of tomatoes, corn, cooked noodles, cheddar cheese and queso fresco and stir
Top with garnish or choice
